HARVESTING
Our Harvesting is between November and February, as this is when the trees are at their most mature state .
We do not use any machines to pick the Olives , they are all hand picked . This technique guarantees that the Olives cannot be crushed before they are squeezed and preserves the aromas .
By Hand Harvesting this also avoids any harm to the tree.
